Easy Cajun Sausage and Rice Skillet

A flavorful one-pan meal packed with smoky sausage, tender rice, and vibrant Cajun spices. Perfect for busy weeknights!

  • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 4 minutes.
  • Stir in diced onion, bell pepper, and garlic. Cook for 3 minutes until softened.
  • Add rice, chicken broth, Cajun seasoning, paprika, salt, and pepper. Stir well and bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and liquid is absorbed.
  • Fluff with a fork and garnish with parsley before serving.
