4 salmon fillets
1 cup heavy cream
1/3 cup sun-dried tomatoes, chopped
2 garlic cloves, minced
1/4 cup grated Parmesan cheese
1 tsp Italian seasoning
1 tbsp olive oil
Fresh basil leaves for garnish
Instructions
Heat olive oil in a skillet over medium heat and sear salmon fillets until golden, about 3 minutes per side. Remove and set aside.
In the same skillet, sauté garlic until fragrant. Stir in sun-dried tomatoes, heavy cream, Parmesan, and Italian seasoning. Simmer for 3-4 minutes.
Return salmon to the skillet and spoon the sauce over the fillets. Simmer for 10 minutes until the salmon is fully cooked.
Garnish with fresh basil leaves and serve warm.
Notes
Use skin-on salmon for added flavor and to prevent overcooking.
Pair with steamed veggies or pasta to soak up the creamy sauce.
