Parmesan Roasted Carrots Recipe

Sweet, tender carrots roasted to perfection with Parmesan and garlic for a crispy, cheesy finish. A simple yet flavorful side dish!

  • 6 large carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Toss the carrots with olive oil, garlic powder, salt, and pepper. Spread them in a single layer on the baking sheet.
  • Roast for 20 minutes, then sprinkle Parmesan over the carrots. Bake for another 5 minutes until golden and crisp.
  • Garnish with parsley and serve warm.

Notes

  • For extra crispiness, broil for 1–2 minutes after roasting.
  • Try adding paprika or chili flakes for a spicy twist.
